Directions Preheat oven to 350 degrees. Combine all ingredients. Mix well. Place mixture in a baking dish and bake in the oven for 45 minutes. Once ready to serve (it's delicious eaten hot or cold), cut into 9 pieces. Ingredients 7 ounces light vanilla soymilk 2 tablespoons canned pure pumpkin Вј teaspoon cornstarch Вј teaspoon pumpkin pie spice Вј teaspoon vanilla extract No-calorie sweetener, to taste

Directions

Combine all ingredients, except the sweetener, in a small pot. Stir well. Bring to a boil, stirring constantly.

Once mixture begins to froth, continue to boil for 1 minute. Remove from heat and pour into a mug.

Allow to cool slightly. Sweeten, to taste, with your no-calorie sweetener of choice and enjoy.
